Chicken with Broccoli
450 gr. chicken breasts (boneless and skinless)
— 4-5 sprigs Italian parsley
— 3-4 sprigs of thyme or oregano
— 1 bay leaf
— 1 clove garlic
— 1 tablespoon of table salt or sea
— 1 teaspoon black pepper
— 2 tablespoons olive oil
— 450g. broccoli florets
— 2 cloves of garlic (crush)
— 1/2 cup light raisins
— 1 teaspoon of sweet and sour sauce (for example, perfect «Worcestershire»)
— 1 teaspoon of apple cider vinegar
— 1/4 teaspoon of table or sea salt and freshly ground black pepper to taste
1.Rinse the chicken breasts in cold water. Half-fill a medium saucepan with water and add herbs, bay leaf, garlic, salt and pepper. Bring water to a boil and place the chicken breasts.
2. Then, simmer for 5 minutes. Remove the pan from the heat, cover and keep the chicken in hot water 15-20 minutes.
3. Taking the breast of the water, tear it into small pieces, set aside to cool.
4. To prepare broccoli, heat the pan over medium heat. Add the butter and place the broccoli, pour a little water. Simmer 3 to 5 minutes. After add the garlic, raisins, sweet and sour sauce, apple cider vinegar and season with salt and pepper to taste. Simmer for about a minute and then toss the chicken in a cell and leave on the fire for another 1-3 minutes. Serve warm or at room temperature.
