Сhicken salad with wasabi sauce
4 chicken breasts (skinless and boneless)
1/2 cup mayonnaise
1/4 cup rice vinegar
1/2 tablespoon of wasabi powder
1/2 teaspoon Asian sesame oil
1/2 tablespoon water
salt and freshly ground pepper to taste
Boston lettuce (small tear)
1 large Asian pear (cut in half, remove the core and finely chopped)
1/2 seedless cucumber (cut in half lengthwise and thinly slice diagonally)
2 heads of green onions (finely chopped)
1 cup bean sprouts
1/2 cup roasted wasabi peas (coarsely chopped)
Boil the chicken breasts, then put on a plate to cool down the breast.
Meanwhile, in small bowl, whisk together the mayonnaise with the rice vinegar, wasabi powder, Asian sesame oil and add 1/2 tablespoons of water, then season with salt and pepper to taste.
In a large salad bowl, combine lettuce, Asian pear, cucumber, green onions, bean sprouts and wasabi sauce 2/3 cup. Cut the chicken breasts along the thickness of 0.8 cm. And put the slices on top of salad. Pour the remaining sauce with wasabi, sprinkle with fried peas wasabi and serve immediately.
