Tangerine ice cream

500 g tangerine
250 ml cream milk (33% fat)
2 pcs. chicken eggs (yolks)
150 g of sugar
100 ml. water
1 tbsp powdered sugar
the taste of chocolate milk (for decoration)


Тangerine Wash, peel and place in blender.
Grind in a blender mandarins. The resulting mixture is well rub through a sieve.
You should get a liquid mandarin puree.
Egg yolks separated from whites. With sugar (150 g), yolk (2 pcs.), Add cold water (100 mL). Good beat with a mixer until fluffy foam.
The resulting egg-sugar mixture is brought to a boil and boil for about 5 minutes, stirring constantly. Then cool completely.
Whip cream with a mixer with powdered sugar (1 tablespoon) until a thick mass.
Mix the whipped cream, egg-sugar mixture and tangerine puree. Beat with a mixer and pour into a plastic container.
Remove the freezer for 4 hours. Stir every hour whisk to break up ice crystals.
After the final mixing, expanded ice cream in silicone molds and send it to freeze. Then, remove the frozen ice cream from the molds, decorate with mandarin syrup and chocolate chips. Tangerine syrup I did this: squeeze the juice of one tangerine, added 3 tsp sugar and boil until thick.
