Zucchini and Potato Bake Recipe

Ingredients:

Courgettes 675 g
Potatoes 450g
Garlic cloves 3
Red bell pepper 1 piece
Onions 1 head
Parsley chopped 3 tablespoons
Olive oil 150 ml
Tomatoes 450 g
Oregano 1 tsp
Salt to taste
Freshly ground black pepper to taste

Preparation:

1. Preheat oven to 190 degrees.

2. In a baking dish, combine sliced zucchini, sliced potatoes, thinly sliced peppers, parsley, chopped garlic, chopped onion half rings, salt, black pepper, olive oil and finely chopped tomatoes. Smooth the top and sprinkle with oregano.
3. Put in the oven for 1.5 hours, stirring occasionally.
