Cream Of Potato Soup Recipe


200g white mushrooms
200g potatoes

100 ml of 10% cream

50g butter

20 ml of olive oil

about 1 liter of vegetable broth

1 onion

salt pepper

a sprig of fresh thyme


In a saucepan with a thick bottom to melt the butter, pour the olive and stew on low heat until transparent chopped onions

Add the mushrooms and fry for about 5 minutes

Add the potatoes, thyme and pour the vegetable broth so that it barely covered the contents of the pan

Cook until the potatoes are ready

Punch blender

Pour the cream, stir and add the vegetable broth to taste, correct for salt, pepper

Warm up and serve with croutons and a drop of olive oil, I have served with a sprig of rosemary
