Qutab with fresh herbs
Wheat flour 2 cups
½ cup water
½ teaspoon salt
Greens 100 g
1. In a bowl with the flour, add half of warm water and salt, stir with a fork. Continue adding the remaining warm water, stirring constantly. Put on a floured surface and knead the dough. Cover it and leave for half an hour.
2. Chop the herbs and mix well; kutabs will fit for any fresh herbs — parsley, dill, cilantro, basil, sorrel, chives, etc., so feel free to experiment. If you wish, you can add to the stuffing pickled cheese or cheese.
3. Divide dough into 4 equal parts, each of which should roll out into a thin pancake. Arrange greens on half of the pancake and season it with salt. Then fold it in half and seal — with your fingers or a fork so that no trapped air bubbles.
