Risotto with seafood


Rice for risotto — 200 gr
Meat with mussels / m — 100 m
Shrimp without head s / m — 2 pieces
Seafood cocktail with / m — 200 m
Onions — 1/2 pieces
Zucchini — 1/2 pieces
Thyme — 1 sprig
Olive oil — 30 ml
Cream 22% — 100 ml
Grated Parmesan — 60 g
Cherry tomatoes — 5-6 pcs
Basil Green — 1 sprig
Cilantro — 3 sprigs
Garlic — 2 cloves
Dry white wine — 30 ml
Salt — to taste
Ground pepper — to taste


To start with the onion and garlic finely chop and fry in olive oil until golden brown. Parallel to thaw seafood, aged in cold water for about 10 minutes. Figure rinse under running water and allow to drain. Pour the rice into the pan with the onions and garlic, stir and lightly fry over high heat. Reduce heat. Gradually pour in 1/2 cup of water into the rice as absorption. Evaporated for 2 minutes. Drain the thawed seafood and rinse them in a colander.
Put the rice in seafood. Simmer for 3 minutes, adding water if necessary. Zucchini cut into small cubes. Add the rice and cook for another 2 minutes, stirring constantly. Salt and pepper. Pour the cream, adding thyme, and stirred for 30 minutes. Remove from heat, add the grated cheese and mix. A little cheese, leave for decoration feeding. Add the cherry tomatoes and basil with cilantro. Season with salt and pepper to taste.
